You can either turn on a shower or bath in your home to a hot setting until the tank runs out of hot water or you can connect a hose to the tank drain valve and drain the tank that way. Either way, the tank needs to be empty to be removed.
The final thing you should do before a technician arrives is ensure there's a clear path to the water heater. Most water heaters are installed in garages. If you have boxes or other items around the tank, remove them. A technician will need space around the tank to remove and install the new one. They'll also need a path to haul the old tank away and bring the new tank in.
